Carola's Pumpkin Soup

After a couple of mediocre first tries (mind you that I never had the consultants as a guide) with steamed fish and chocolate chip cookies, we had "Carola's Pumpkin Soup" last night.  And what a success!  The texture was beyond what I was able to create with my teeny immersion blender.  Unfortunately, the girls were not around to taste as they would have appreciated the silky, smooth texture.

We were too hungry and impatient to take pictures.  So just believe us that it looked delicious with a few sprinkles of fresh chives from the garden and a couple of twists from the pepper mill!

Here is my variation of the recipe -- I basically used only half the potatoes and added 1 carrot to the mix.  I also did not use skins or seeds of any of the vegetables.

Ingredients

(about 4 portions)

1 onion, peeled and quartered
2 cloves garlic, peeled
~100 grams bacon, (about 3-4 slices) torn or cut to 5cm lengths
2 tablespoon olive oil
1/2 teaspoon curry powder,
800 grams pumpkin, chopped to 3x3cm cubes
100 grams potato, (1 small Yukon Gold) peeled and chopped to 3x3cm cubes
100 grams carrot, (1 medium) peeled and chopped to 3cm logs
500 grams water,
2 tablespoons vegetable stock concentrate, (or chicken stock paste)
100 g cream
Chopped chives

Preparation

1. Add onion, garlic and bacon to Thermomix bowl.  Chop for 4 secs / Speed 5.  Scrape down edges and add olive oil and curry powder (you could more if you like).  Saute on Varoma temp / 3 mins / Speed 1.

2. Add pumpkin, potato, carrot and water (not more than 2 litee mark on the jug).  Add stock concentrate and cook on 100° / 25 mins / Speed 1.

3. Slowly turn the speed dial up to Speed 6 until balanced and no longer vibrating, about 5 to 10 seconds.  Once settled, turn speed dial up to Speed 9 / 1 min.  Add cream and combine on Speed 4 / 5 secs.  Ladle soup into bowls and top with chopped chives, and possibly freshly ground pepper.  Enjoy with crusty bread.

Trudi is here

My Thermomix arrived a couple days ago.  I can't believe I had the strength to not unpack immediately, but the cleaners were due and I thought it would be more fun to install her once the kitchen is clean.  So I managed to wait until yesterday...




Then I flipped through the cookbook that came with the machine (I requested "My Way of Cooking") but nothing struck my fancy right away.  I might try the chocolate chip cookies tomorrow for the preschool picnic as I think I have all the ingredients at hand.

And tonight, I will try a steamed fish, vegetables, and potatoes recipe that I found online.  Let the fun begin!
